Vino Chianti Colli Senesi : è ideale con pasta, carni bianche e rosse , selvaggina, formaggi./ bottiglia di  0, 751  volume 13,5% _________




    vino > ..Calice di Toscana Rosso  750 ml , 11,50 vol - ( Grosseto ) _ Toscana IGT is the most famous – and the most commonly used – of Italy's Indicazione Geografica Tipica (IGT) titles. The geographical region it indicates is, in short, Tuscany. Toscana IGT wines can be made in any village in any of Tuscany's 10 provinces (Arezzo, Firenze, Grosseto, Livorno, Lucca, Massa Carrara, Pisa, Pistoia, Prato and Siena).






vino  Chianti >75cl - 12,5 vol.   ..ha colore rosso rubino brillante, è profumato, fruttato e rotondo. Il Sangiovese, però, se viene utilizzato in purezza o in percentuali consistenti, genera un vino corposo e complesso adatto all’invecchiamento.
A questo processo sono destinate solo le uve migliori, generalmente non più del 20% dell’intera produzione di Chianti Classico. Il  Riserva  è quindi un vino più corposo e molto pregiato.
Una parte importante in questo processo la giocano i legni delle botti: un tempo si usavano grandi botti in castagno o rovere, oggi si preferiscono contenitori più piccoli (barriques francesi in rovere). Per quanto riguarda gli abbinamenti, le carni rosse  cotte alla griglia sono un ideale compagno per i vini di medio corpo, dalla tannicità contenuta, mentre vini più complessi sono da abbinare a carni rosse cotte in modo più elaborato. È preferibile conservare le grandi riserve in attesa del momento giusto in cui accompagneranno piatti di selvaggina / formaggi stagionati.




Calamari  chef  Adriano : ingredienti e dosi per 4 persone_ 800 gr di calamari freschi ( o surgelati) , 3 cipolle bianche , 2 bustine di zafferano , 2 spicchi di aglio , 1 peperone giallo , 1 arancia , 1 dl di vino bianco secco , 4/5 cucchiai di pomodoro passato , 40 gr di olive nere snocciolate , 30/40 gr di olio extravergine d'oliva , sale e pepe .Method- In un tegame con olio d'oliva , fate cuocere la cipolla e l'aglio tagliati a filangèe ( lavate e asciugate i calamari tagliati a filangèe un pò grande , fate cuocere a fuoco vivo mescolando solo con la spatola di legno , a parte fate sciogliere in un bicchiere o altro , lo zafferano e il vino bianco e aggiungetelo solo dopo 12/14 minuti della cottura dei calamari , poi aggiungete il peperone tagliato a pezzi a piacere e lasciate evaporare per 5/7 minuti , solo adesso aggiungete la passata di pomodoro , una piccola scorza d'arancia tritata finemente , salate e pepate , coprite e proseguire la cottura per 18/22 minuti a fuoco basso , prima della fine della cottura , se troppo denso , togliete il coperchio e alzate la fiamma per far stringere il tutto , adesso aggiungete le olive tagliate a metà ( se grande) salate e pepate .. servire caldo .

Il Maremma Toscana Rosso Doc è comunemente prodotto da uve Sangiovese (minimo 40%), Ciliegiolo e altre uve rosse Toscane. Il colore è rosso rubino di buona intensità. Le note olfattive sono incentrate sul fruttato, ben supportato da note di frutti rossi come ciliegia, lampone e frutti di bosco, con ottimo connubio di speziato, con note di pepe nero. Buon attacco in bocca, con ottimo equilibrio tra alcol e acidità, morbido, vellutato, leggermente amarognolo.
                                       



 Vino MAREMMA  TOSCANA  - SASSI  del  MARE  - è un vino rosso di alcool 13%  , servire a  16/18 gradi , bottiglia  di  75cl,750ml  / si produce ai tempi dell'antica Tuscia cioè mare e monti _

    Falanghina _ Two varieties of Falanghina grapes are grown throughout the region of Campania, and both make excellent, crisp white wines. One of Italy’s oldest grape varieties, and cultivated in Campania since ancient Roman times, Falanghina is the white wine of the region. Its slightly sweet and fruity features make it the perfect white wine to serve with fish, pasta or even as a summer aperitivo. You’ll find it in its pure form, such as the fine Taburno Falanghina DOC, and also blended to make the excellent Falerno del Massico and the regional wines produced on the Amalfi , Sorrento & Capri  !!

In 1994, the wines of the Campi Flegrei, such as White, Red, New Wine, Falanghina (including sparkling wine) and Per' e palummo and Passito (strong sweet wine made from raisins) obtained the DOC (Controlled Origin Denomination) certificate. So it was awarded the wine growing better bound to the tradition. Here the vines are often over one hundred years, feature that give the wines originals flavours and aromas. The “red” protagonist in the Phlegrean Fields is a type of vine much beloved by Neapolitans and the name Piedirosso doesn’t ring a bell to anyone in the other Italian regions. Basically, like the Coda di Volpe for white wines, the Piedirosso has the function of making wine tender and shortening wait time, by cutting acidity and diluting tannins. You don’t have to be an expert to understand that if the Piedirosso grapes are turned into wine, they give an easy, young wine that can be instantly tasted. A merry wine that represents a model of the Partenopean taste, as its great success in the city shows. Red wine par excellence for Neapolitans is Piedirosso. After Aglianico, in fact, it is the most popular red vine in Campania. A vine that starts with the Costa d’Amalfi, turns into the Gragnano and the Lettere, continues in the Lacryma Christi, while in Capri Ischia and the Phlegrean Fields it’s called “Per ‘e palumm”, pigeon foot for the colour red the small roots take when it’s nearly ripe. However, it can be found also in other parts of the region. The Piedirosso is generally considered a young and fresh wine and it has always been present in the Neapolitan restaurants.













>GRAGNANO < A historical tradition assigns to the cultivation of the vine in our area dating around the first century and shortly after the eruption of Vesuvius (in ’75), that had driven up the hills refugees di Stabia and Pompei. So even then the cultivation of the vine was intensely practiced, as evidenced by the numerous wine vessels found still intact in Villae unearthed in our area. The real glory and rise of Gragnano wine can have a precise date: the advent to the throne of Naples, Joachim Murat. The new King did in fact come from France winemakers experts and geologists to implant in our crop-growing areas similar to those in France. Experts stopped their attention on the territories of Gragnano, Casola and Lettere and introduced the crop to be back, until then unknown to our tenants, both new French varieties. The late Diogene Dello Ioio, local agronomist, describes in an article in ” Rome” dated 02.20.1940 the characteristics of the Gragnano wine and lists the vines from which it was obtained “clear, ruby red in color , slightly sweet flavor, a little sparkling, smooth taste and velvety. The vines are characteristic Jaculillo, Palombina, Aglianico, Olivella, del Gelse, Tintore, Castagnara”. In the same article the agronomist mentions an ancient variety grown in the hills of Gragnano; Mangiaguerra already extinct at the time. Currently the cultivation of vines in our area is implemented in most of the cases under the old system to shoot down the pergola. In 1988 finally  arrive the breakthrough and recognition for our DOC wine mentioned by Plinio, Galeno, Columella.

How to serve:
It is cataloged among young red wines that is, between those wines to be drunk from the beginning of the first year following the harvest. Despite the colo , this wine is best served cold cellar after it aired for a good hour so you do find a home in the new environment, as befits a guest all about. The cup is a cup of suitable size limited.








Lacrima   Christi _ Biblical stories of heaven, hell and Lucifer’s fall are often told to explain the origin of the evocative name Lacryma Christi del Vesuvio, which means Christ’s Tears at Vesuvio  . This name is used to describe the red, white and rosé wines made with grapes grown on the slopes of the VULCANO DEL VESUVIO just outside of Naples. The red wine is a blend of Piedirosso, Sciascinoso and Aglianico grapes, while the whites are made with Verdeca, Coda di Volpe and Falanghina grapes.

I vini di Fontana di Papa sono il risultato di 50 anni di esperienza, dedizione e passione da parte dei viticoltori associati. La Cooperativa affonda le sue radici nella storia: il nome fa riferimento ad una Fontana che aveva la funzione di ristorare i viaggiatori, costruita per volere di Innocenzo XII alla fine del XV secolo. Le pendici dell®antico vulcano del Lazio sono da sempre coltivate a vigneto per la produzione del vino le cui qualità sono decantate dai tempi dell®Impero Romano. I Colli Albani sono un territorio situato su un complesso vulcanico inattivo in Italia, situato a 20 km a Sud East di Roma. La Cima dominante è quella di Monte Cavo a circa 950 m. di altezza. Ci sono due piccoli crateri che contengono i due laghi, di Albano e di Nemi .
